Hot Buttered Rum

1 cup brown sugar
1 cup unsalted butter
1/8 cup Silk Road bitters (or use ground cinnamon,cloves and nutmeg)

Mix above when butter is at room temperature and store covered in fridge where it will keep a couple of weeks.

To use:
1 tbsp. spiced butter mix in a glass
2 ounces Duck Island Rum
top with 1/2 to 3/4 cup boiling water
garnish with cinnamon stick


Old Fashioned



2 oz Wild Oak Whisky

0.5 oz Orange Simple Syrup

Dash of Orange Bitters


Lit Wit (serves 2) 


2 ounces of Juniper's Wit Gin
1 long cucumber
1 ounce of Simple syrup
4 oz. sparkling wine (Preferably PEC!) 
Lavender Bitters

How to

Using a vegetable peeler, shave thin ribbons from cucumber. 
Cut 6" from cucumber into small pieces. Muddle in a cocktail shaker, then add gin and simple syrup and fill shaker with ice. 
Shake and strain into 2 ice-filled rocks glasses or large wine glasses. 
Top each with 4 oz. of sparkling wine, garnish with 3 cucumber ribbons and gently stir together.
Apply 2-3 drops of bitters to the top and serve
